Simple Down-Maine Blueberry Pie


This down-home, juicy blueberry pie is baked in an 8-inch pie plate. It is flavored with cinnamon & has a little lemon juice for a slight tartness.



Ingredients:

  • Pastry for a double-crust 8-inch pie plate
  • 1 Tbsp butter, melted
  • 3 cups frozen Maine blueberries
  • 1/2 cup sugar
  • 1 1/2 Tbsp flour
  • 1/8 tsp salt
  • 1 tsp cinnamon
  • 1 tsp lemon juice
  • 2 Tbsp cold butter, cut into small pieces

Method

Line an 8-inch pie plate with pastry. Brush bottom crust with melted butter. Pour 3 cups Maine blueberries into pie crust. Mix together sugar, flour, salt, cinnamon and lemon juice; scatter evenly over blueberries. Dot with pieces of butter; top the pie with upper crust. Cut slits in top crust. Crimp edges. Bake in 450 degree oven for 10 minutes. Reduce oven to 350 and continue baking 35 to 40 minutes, or until done. Even when cooled, pie will be somewhat "soupy," so serve with vanilla ice cream and enjoy.

Notes: This pie probably won't win the "prettiest pie" contest on TV, but it never knew about TV. It's always been made in Maine, and it will always continue to be made in Maine. It's simple blueberry pie, made with native berries, the way our grandmothers and our mothers made it, and now, the way we make it. Vanilla ice cream is a "must have' item with this pie.
