Sensational Double Layer Pumpkin Pie

Get a real dose of pumpkin with this double layer pie. Vanilla pudding, pumpkin and cream cheese make this a real delight.
Ingredients
- 3 oz pkg cream cheese
- 1 cup plus 1 tbsp cold half and half or milk
- 1 tbsp sugar
- 1 1/2 cup thawed Cool Whip
- 1 graham cracker crust
- 2 4 oz pkgs instant vanilla pudding
- 16 oz pumpkin
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves

Method
Mix cream cheese, 1 tbsp half and half or milk and sugar with a wire whisk until smooth. Gently stir in whipped topping and spread on the bottom of the crust. Pour 1 cup half and half or milk into mixing bowl and add the pudding mix. Beat with a whisk until well blended for 1 to 2 minutes. Let stand 3 minutes. Stir in pumpkin and spice and mix well. Spread over cream cheese layer. Refrigerate at least 2 hours. Garnish with additional whipped topping and nuts as desired.
