A crust of flour, oats and peanut butter is covered with cream cheese, marshmallow cream & tiny chocolate chips, and topped with sliced fruit.
Preheat oven to 350 degrees. Spray a round pizza pan or rectangular jelly roll pan with nonstick cooking spray.
Crack eggs into bowl and whisk until fluffy. Heat butter and peanut butter together just until melted; stir into egg mixture. Stir in vanilla, brown sugar and soda. Mix well.
Add flour gradually, stirring as you go. Gradually add Quaker Oats and mix together. Press crust mixture evenly in pan. Bake approximately 20-25 minutes, or until crust is golden brown. Cool.
Mix together cream cheese, marshmallow cream and vanilla. Fold in chocolate chips. Spread topping over cooled cookie crust; top with sliced bananas and strawberries. Cover and refrigerate for 2 hours before serving.
Notes:
This is a twist on a old favorite, with mouth watering peanut butter and chocolate combined with strawberries and bananas. Who could ask for anything more!
