Scalloped Pineapple


Canned pineapple is layered in a casserole with crushed saltine crackers, and a butter, sugar, egg & cream mixture, then baked.



Ingredients:

  • 3 cans pineapple chunks, drained
  • 1/2 cup heavy whipping cream
  • 1 cup crushed saltine crackers
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup butter, softened

Method

Cream together butter and sugar. Beat in egg; add cream. In a casserole dish, layer as follows: 1 can of pineapple, 1/3 cup of cracker crumbs, 1/3 of the butter mixture. Repeat 2 more times. Bake, uncovered, at 400 for 30 minutes.

Notes: This was given to me by one of my co-workers. It was her grandmother's recipe that was made every year for Thanksgiving. It is highly requested here at work.
