Scalloped Pineapple

Canned pineapple is layered in a casserole with crushed saltine crackers, and a butter, sugar, egg & cream mixture, then baked.

  • Servings: 8

Ingredients:

3 cans Pineapple Chunks, drained
½ cup Heavy Whipping Cream
1 cup Crushed Saltine Crackers
1 cup Sugar
2 Eggs
½ cup Butter, softened

Directions:

Cream together butter and sugar. Beat in egg; add cream. In a casserole dish, layer as follows: 1 can of pineapple, 1/3 cup of cracker crumbs, 1/3 of the butter mixture. Repeat 2 more times. Bake, uncovered, at 400 for 30 minutes.

Helpful Tips:

This was given to me by one of my co-workers. It was her grandmother's recipe that was made every year for Thanksgiving. It is highly requested here at work.
