
Roasted tomatoes and bloody Mary mix combine with croissants, vegetable broth and brown sugar to make this bread pudding.
Preheat oven to 350 degrees. In a medium bowl, whisk together the bloody mary mix, brown sugar, butter and vegetable broth. Beat in the eggs, one at a time; set aside. In a larger bowl, combine the bread and tomatoes. Add the liquid mixture, mixing well. Pour contents into a 2 qt. baking dish coated with non stick cooking spray. Cover. Bake for 45 to 55 minutes or until knife inserted in center comes out clean.
