Sal's Salmon "Pie"

This main dish "pie" combines salmon & seasoned mashed potatoes in a baking dish. The top is brushed with an egg wash and sprinkled with bread crumbs.
 

Ingredients

  • 4 large potatoes (about 2 lbs), peeled and quartered
  • 1 1/2-2 lb salmon, fresh or canned
  • 1/4 cup chopped parsley
  • Bottled hot pepper sauce (to taste)
  • 1 lemon
  • Salt (to taste)
  • Pepper (to taste)
  • 1/4 cup milk
  • 2 tsp butter
  • 1 egg and 1 Tbsp water
  • Bread crumbs (as needed)
  • Garlic powder (to taste)

Method

Take 2 lb. salmon (fresh or canned; if canned, no need to cook.) To cook, place in skillet with 2 tspn melted butter. Season with salt/pepper to taste. Slice 3 or 4 slices of lemon and put on top of salmon. Sprinkle to taste with a few drops of hot sauce. Cover and cook on medium-low heat until salmon flakes easily with a fork. Break salmon into chunks. Meanwhile, boil potatoes until fork-tender, drain and put in mixing bowl. Mash with potato masher, then season and moisten to your liking with butter, milk, salt & pepper, and garlic powder; add parsley. Stir salmon and some of the liquid from the pan into potatoes; put mixture in large oven-safe dish. In small bowl, mix egg & water; brush over the top of the mixture and sprinkle with bread crumbs. Put in 375 degree oven until top is golden brown.
