Ruth's Potato Candy

This dessert might have a different name, but it is a rich and delicious candy that is a family tradition to some.
 

Ingredients

  • 1 small potato
  • Powdered sugar
  • Peanut butter

Method

Peel and dice one small potato. Cover potato with water in a saucepan and boil until potato is fork tender, then drain. In a mixing bowl, thoroughly mash potato. Gradually stir in powdered sugar until a dough consistency is achieved. Divide dough into thirds. Sprinkle powdered sugar on counter and roll dough out to approximately 1/8 inch thickness. Spread a thin layer peanut butter evenly across dough. Roll up in jelly roll fashion and repeat with other two portions of dough. Refrigerate overnight then cut into approximately 1/4 inch slices and serve. Keep potato candy refrigerated until serving.
