Romona's Strawberry Surprise Pie

A simple, no-bake dessert with a chocolate cookie crust and a creamy strawberry filling.
 

Ingredients

  • 28 chocolate sandwich cookies, crumbled and divided
  • 1/4 cup melted butter
  • 1 14 oz can sweetened condensed milk
  • 1 12 oz frozen whipped topping, thawed
  • 1 1/2 tsp sugar free strawberry gelatin
  • 1/2 cup hot water
  • 1 1/2 cups fresh strawberries, sliced and sweetened
  • 3-4 tbsp lemon juice
 
Method

Place cookies in a food processor and pulse until fine crumbs. Reserve 1/4 cup crumbs for garnish. Add melted butter to crumbs and stir until well blended. Place crumbs in a 9 1/2 inch pie pan and press to sides and bottom to form a crust. Place strawberry gelatin in a bowl and add hot water. Stir until gelatin is incorporated. Cool and stir in sweetened condensed milk and lemon juice. Fold whipped topping into gelatin mixture then fold in strawberries. Place mixture into cookie crust and sprinkle with reserved cookie crumbs; refrigerate at least 4 hours before serving.
