Roasted Browned Butter-Sweet Potato Pie

Sweet potatoes are used instead of pumpkin, along with pumpkin pie spice, browned butter, and sweetened condensed milk in a graham shell.
Ingredients
- 2 medium sweet potatoes (need about 1 1/2 cups of flesh)
- 1 Tbsp (safflower) oil
- 10 oz sweetened condensed milk (about 1 cup)
- 1/4 cup sugar
- 1/2 cup brown sugar
- 3 large eggs
- 2 Tablespoons butter
- 1 teaspoon of pumpkin spice mix
- 1 teaspoon of vanilla
- 1 ready-made graham cracker pie crust

Preheat oven to 400 degrees. Wash sweet Potatoes and Pat Dry. Put the sweet Potatoes in a shallow baking pan. Drizzle 1 Tablespoon of oil on sweet potatoes. Roast in oven until potatoes are soft. Remove from oven and cool. Melt butter in saucepan just until it starts to brown and has a nutty aroma; remove from heat and let cool. Remove sweet Potato skins. Put sweet potato flesh into food processor and gently pulse. Slowly add browned butter and the rest of the ingredients to food Processor. Continue to pulse until smooth. Pour mixture into pie crust and bake about 35 to 40 minutes or until pie is nearly set. Cool completely on wire rack. Serve or refrigerate.
