Rhubarb Pudding Pie

This rhubarb pie is baked in a round cake pan. Both the crust and the filling are spiced with cinnamon.
Ingredients
- Crust:
- 1 cup flour
- 1 tsp salt
- 3 1/4 tsp baking powder
- 1/4 tsp cinnamon
- 4 1/2 Tbls shortening
- 1/2 cup milk
- Filling:
- 2 1/2 cups diced, peeled rhubarb
- 3/4 cup brown sugar
- 1/4 tsp cinnamon
- 2 Tbls butter, melted
- Pinch of ginger or mace

Method
Combine dry ingredients. Cut in shortening. Slowly add the milk to make a soft dough. Grease and flour an 8 or 9 inch layer cake pan. Gently pat the dough into the pan to a one half inch thickness on the bottom. Combine all the ingredients for the filling and spoon them into the crust. Bake at 325' for 30 minutes. Serve with cream if desired.
