Rhubarb Cream Pie

This recipe contains stewed rhubarb, sugar, flour, orange juice, and butter. It's poured into a bake pie shell and topped with a meringue.
Ingredients
- 1 cup sugar
- 3 tbsp. flour
- 2 1/2 cup stewed rhubarb
- 2 egg yolks, lightly beaten
- 1/3 cup orange juice
- 1 tbsp. butter
- 1 baked 9-inch pie shell

Method
Sift sugar and flour. Add to rhubarb; cook slowly till thickened and bubbly, stirring constantly. Stir some of the hot mixture into egg yolks, then return all to heat & cook 1 more minute. Remove from heat, add orange juice & butter. Pour into pie shell.
Notes: Can use a mixture of strawberries and rhubarb. Make a meringue and pile on top of pie, then bake until brown in oven.
