Rhubarb Butter Crunch

This crisp uses fresh rhubarb in a sugar sweetened syrup, thickened with a little flour as it bakes. A brown sugar, flour, and rolled oats mixture with both butter and shortening make the topping for the fruit dessert.
 

Ingredients

  • 3 cups diced rhubarb
  • 1 cup sugar
  • 3 Tbsp. flour
  • 1 cup brown sugar
  • 1 cup rolled oats (oatmneal)
  • 1 1/2 cups flour
  • 1/2 cup butter
  • 1/2 cup cold shortening

Method

Combine first 3 ingredients and place in a 6x10-inch baking dish. Combine brown sugar, oats and remaining flour; cut in butter & shortening. Sprinkle over rhubarb mixture. Bake at 375 degrees for 40 minutes; serve warm with ice cream or Cool Whip.
