Refrigerator Lemon Cheesecake

This easy cheesecake is made with lemon Jell-O and chilled in the refrigerator, so it's a great summer dessert or a nice light finish to a hearty meal.
Ingredients
- Crust:
- 1 c. oatmeal, uncooked
- 1/4 c. brown sugar
- 1/4 c. melted butter
- Filling:
- 1 3oz. pkg. lemon Jell-O
- 1/2 c. boiling water
- 1 c. sugar
- 1 t. vanilla
- 1 13 oz. can evaporated milk, whipped (put milk into freezer before whipping)

Method
Crust: Toast oats in oven at 350 for about 10 min. Mix with brown sugar and add melted butter. Put into bottom of 9" spring form pan. Refrigerate. Filling: 1 13 oz. can evaporated milk, whipped (put milk into freezer before whipping). Put Jell-O into cup; add boiling water and ice cubes for 1 c. liquid. Set aside. While evaporated milk in small mixer bowl. Place cream cheese, sugar, and vanilla into large mixer bowl. Beat until cream. Add gelatin mixture. Fold in evaporated milk. Pour into crust and refrigerate several hours or overnight. Decorated with grated lemon peel and whipped topping.
