Red, White and Blueberry Pie

This festive fruit pie is packed with flavor from the white chocolate dipped strawberries and white chocolate pudding to the blueberries and whipped cream.Ingredients
- 1 refrigerated pie crust
- 1 quart fresh strawberries, divided
- 4 squares (1 ounce each) white chocolate for baking
- 8 oz 1/3 less fat cream cheese, softened
- 3/4 cup milk
- 1 package white chocolate instant pudding
- 1 1/2 cups fresh blueberries
- 1 cup whipped topping, thawed

Method
Unfold crust onto a lightly floured surface. Roll into 11 1/2 inch circle and put in pie plate, pressing dough into bottom and up sides. Prick bottom and sides using pastry tool to eliminate crust from bubbling. Bake 10-12 minutes at 425 degrees until golden brown. Cool completely. Rinse strawberries and pat dry. Cut strawberries in half and dip eight halves in melted white chocolate. Spread remaining white chocolate on the baked crust and sides. Slice other strawberries with an egg slicer and place sliced strawberries on top of white chocolate layer. Beat cream cheese until smooth. Gradually whisk in milk, and then add in pudding mix until it becomes thick. Spread evenly over sliced strawberries. Arrange blueberries and strawberries on top of pudding mixture. Pipe whipped topped around the edge of the crust.
