
This baked custard is so easy, everyone will think you worked for hours. A great use of fresh berries.
Preheat oven to 350 degrees.
1. In a medium size bowl add egg plus yolks and granulated sugar. Mix with a whip until blended.
2. Add vanilla to the mixture. Then add flour and mix until ingredients are incorporated.
3. Gradually add milk and mix until batter is smooth.
4. Pour about 1/4 of an inch of batter into an 8 inch, well-buttered, ovenproof glass dish, round or square.
5. Carefully spread the raspberries on top of the 1/4 inch layer of batter and then add the remaining batter.
(don't worry if some of the berries float to the surface).
6. Bake about 50 minutes or until the batter is set and golden. Dust with powdered sugar before serving.
Serve warm or chilled. For garnishing, add a berry and a mint leaf on the top of each slice.

Note: This flan is easy and can be made with a variety of fruit, fresh or canned, well-drained. It never fails to bring praise to the cook.
