Raspberry Cheesecake Cooler

A refreshing gelatin salad with flavors of raspberry and lemon lime and a creamy whipped topping.
Ingredients
- 3 oz light cream cheese, softened
- 1 envelope Dream Whip, prepared with skim milk
- 1 1/2 cups water
- 1 can lemon lime soda
- 2 cups frozen unsweetened raspberries
- 2 pkgs raspberry gelatin

Method
Place cheese in small bowl, microwave on medium until softened, 30 to 45 seconds. Stir until smooth and set aside. In another mixing bowl, prepare Dream Whip according to package directions, using skim milk. Fold in cream cheese and set aside. Place water in bowl, add gelatin and stir until dissolved. Stir in lemon lime soda. Take 1/2 cup of the gelatin/soda mixture and stir into cream cheese mixture. Add raspberries to remaining gelatin and chill until slightly thickened. Pour chilled gelatin into 9" round cake pan. Spread cream cheese mixture evenly over top and chill for 3 hours until firm. Cut into wedges to serve and garinsh with a lime wedge and mint sprig.
