These cookies are stuffed with an almond drizzled with white chocolate and rolled in coconut. What a treat.Ingredients
- 1 cup butter, softened
- 2 cups flour
- 1/3 cup sugar
- 2 teaspoons almond extract
- 2 teaspoons water
- 1/2 cup finely chopped almonds
- White melting chocolate
- 2 bags coconut
- Toasted almonds, cut in half

Method
Preheat the oven to 325 degrees. Combine the first 6 ingredients. Roll into very small balls with piece of almond in center. Place on cookie sheet and bake for 15 minutes. Let cool. Melt white chocolate. Cover balls with chocolate and roll in coconut. Freeze to firm up.
