Quick and Easy Chocolate Coconut Rum Pie

This island inspired dessert is easy to prepare and will taste delicious and from the heart.
Ingredients
- 1 cup sugar
- 4 tablespoons cornstarch
- 1/4 teaspoon salt
- 3 tablespoons cocoa
- 12 ounce can evaporated milk
- 1 cup water
- 1/2 cup coconut rum
- 3 extra large eggs, slightly beaten
- 1/4 cup unsalted butter
- 1 cup flaked coconut
- 1 teaspoon vanilla
- One 10 inch baked pie crust
- Whipped topping
- Garnish: chocolate curls

Method
In a large saucepan, mix sugar, cornstarch, salt, and cocoa. Add evaporated milk, water, coconut rum, eggs and butter to mixture. Whisk over medium heat and cook until think and bubbly. Cook for 2 minutes after mixture begins to boil. Remove from heat and add coconut and vanilla. Pour mixture into cooled pie crust. Cool completely, then cover with whipped topping and refrigerate for 2 hours. If desired, garnish with chocolate curls.
