Quick and Easy Cheesecake

This cheesecake combines cream cheese, eggs, milk and packaged biscuit mix, then has a sour cream topper that goes on after baking.
Ingredients
- 3/4 C milk
- 2 tsp vanilla
- 2 eggs
- 1 C sugar
- 1/2 C Bisquick mix
- 2 8-oz pkgs cream cheese, cut into cubes, softened
- TOPPING
- 1 C sour cream
- 2 T sugar
- 2 t vanilla
- Fruit (to serve with)

Method
Preheat oven to 350. Grease a 9" pie plate. Place milk, 2 tsp. vanilla, eggs, the 1 cup sugar and the Bisquick in a blender. Blend 15 seconds. Add cream cheese. Blend 1 or 2 minutes longer. Pour into pie plate. Bake 40 to 45 minutes or until knife inserted in center comes out clean. Make topping by stirring together sour cream, 2 tablespoons sugar and rest of the vanilla. Spread over the cheesecake as soon as it comes out of the oven. Cool then chill. Serve with fruit.
