Pumpkin Spice Latte Fudge

This fudge is packed with flavor. The white chocolate chips balance out the espresso and pumpkin. For an added twist, sprinkle lightly with salt.
Ingredients
- 2 cups white sugar
- 1 stick butter
- 3 tbsp espresso powder
- 1 cup half and half
- 1/2 cup canned pumpkin
- 1 teaspoon pumpkin pie spice
- 3 tbsp light corn syrup
- 1 teaspoon vanilla extract
- 2 cups white chocolate chips

Method
Butter a 9 X 9 pan and set aside. In a heavy saucepan, combine sugar, espresso powder, milk, pumpkin, light corn syrup and spice then bring to a boil, stirring constantly. As soon as boiling starts, stop stirring and attach a candy thermometer. Allow mixture to reach softball stage, about 235 degrees. Remove mixture from heat and add white chocolate chips and butter but do not stir. Allow mixture to cool to about 110 degrees then add vanilla. Stir 15-20 minutes until mixture starts to thicken and has a sheen. Pour mixture into prepared pan and allow to set for several hours at room temperture. Cut into squares.
