Pumpkin-Rice Cheesecake Pie

The filling for these sweet pies combines pumpkin, sweetened condensed milk, cream cheese, sugar, spice and cooked rice.
Ingredients
- 1 15-oz can pumpkin
- 1 can fat-free sweetened condensed milk
- 1 8-oz cream cheese, softened
- 1 1/2 cups sugar
- 3 eggs
- 1 tsp cinnamon
- 1 1/2 cups cooked rice (cooled)
- 2 8-inch graham cracker pie crust

Method
Combine all ingredients (except rice and crusts) with a mixer until smooth; stir in cooked rice. Pour into crusts and bake at 425 degrees for 15 minutes, then reduce to 350 degrees for 30-40 minutes, or until pies test done.
Notes: Top with whippped topping, or enjoy as is.
