Pumpkin Pecan Puff

A creamy, light pumpkin dessert made with buttermilk, maple syrup and a topping of chopped pecans.
 

Ingredients

  • 2 cups pumpkin
  • 2 tablespoons light butter, melted
  • 1/2 teaspoon cardamom
  • 1/4 cup buttermilk
  • 1 egg, separated
  • 1/2 cup finely chopped pecans
  • 1/4 cup maple syrup

Method

Combine pumpkin, butter, cardamom and buttermilk. Add whisked egg yolk and beat mixture until fluffy. Beat egg white until stiff then fold egg white into mixture. Place mixture into a buttered baking dish. Sprinkle finely chopped pecans over top and drizzle with maple syrup. Bake at 350 degrees for 30 minutes.
