Pumpkin Delight

This dessert is so easy to prepare and it is perfect for the fall holiday season. What a delight.
 

Ingredients

  • 1/2 cup butter, melted
  • 1 box gingersnap cookies, crushed
  • 1 qt vanilla ice cream
  • 2 small boxes vanilla instant pudding
  • 2 cups cold milk
  • 8 oz Cool Whip, thawed
  • 15 oz can solid pumpkin
  • 2 tsp pumpkin pie spice

Method

Crush cookies, reserving 1/2 cup for sprinkling on top and mix the rest with melted butter. Pat into 9 x 13 pan, bake at 325 degrees for 12-15 minutes and let cool on wire rack. In large bowl, at medium speed, combine softened ice cream and dry pudding. Blend a little and add milk. Beat 2-3 minutes and pour into cooled crust. In same large bowl, add the can of pumpkin and the spice and mix together. Fold in Cool Whip and spread on top of ice cream layer. Sprinkle with remaining crushed cookies and refrigerate for 4 hours.

 

Notes: You can do different variations of this by adding different puddings, cookies or even ice cream flavors.
