Potato Candy
A unique candy made with potatoes mixed with coconut and drizzled with chocolate.
Ingredients
- 1 med. potato, peeled and cubed
- 3-3-1/2 c. powdered sugar
- 1-1/2 c. sweetened shredded coconut
- 1 tsp. vanilla
- 2 (1-oz.) sq. unsweetened chocolate

Method
In small saucepan cook potato in unsalted boiling water until soft; drain and mash with a fork. Work in powdered sugar with a wooden spoon. (Amount of powdered sugar will depend on size of potato.) Blend in coconut and vanilla. Mixture will look like a thick icing. Shape into two rolls, 1-inch in diameter. Wrap in waxed paper and chill until firm-about 2 hours. Melt chocolate. Pour over chilled rolls and coat completely. Cool and rewrap. Refrigerate until ready to serve. Cut in thin slices.
