Pomegranate Ice Cream

Rich vanilla ice cream is nicely complimented with wine soaked pomegranate beads.
 

Ingredients

  • 1 pomegranate
  • 1.5 quart vanilla ice cream
  • 1 cup red wine
  • 3 tablespoons sugar
  • Mint leaves, optional

Method

Cut pomegranate in half then in quarters. Remove red seeds and put them in a bowl with 1 cup of wine and 3 tablespoons of sugar. Stir well and leave overnight or for a couple hours. Put 4 scoops of ice cream in bowl and put pomegranate and juice on top of ice cream. Decorate with mint leaves.
