Softened ice cream (topped with chocolate syrup and sprinkles, if you wish) is spread on thin Italian wafer cookies called pizzelles.
Put one pizzelle on a plate. Carefully spread ice cream on it. Add sprinkles and syrup if you'd like. Gently press another pizzelle on top.
Notes:
Take ice cream out of freezer about 5 minutes before you make them. Buy extra pizzelles in case a cookie breaks!!!
