Pineapple Souffle

Pineapple baked up for a warm and comforting dessert in this recipe that closely resembles bread pudding.
 

Ingredients

  • 4 cups white bread, cubed
  • 2 cans pineapple chunks, drained
  • 3 eggs
  • 1 cup butter, melted
  • 1 cup sugar
  • 1 cup milk
 
Method

Butter a 9" X 13" baking dish. Remove crust from bread, cut bread into cubes and add to a baking dish. Mix eggs, sugar, milk and butter; pour over bread. Stir in pineapple chunks. Cover and refrigerate overnight. Remove cover and stir to mix well. Bake in preheated 325 degree oven for 45 - 50 minutes, until golden brown.

 

Notes: This is delicious served with baked ham for brunch.
