Pina Colada Bread Pudding Butter Rum Sauce


This is an easy and delicious bread pudding recipe that is a great finishing touch to any meal.



Ingredients:

  • 2 dozen homemade glazed donuts
  • 1 1/2 cups fat free half and half
  • 1 tbsp coconut extract
  • 1 tbsp rum extract
  • 1 cup flaked coconut
  • 1 cup chopped macadamia nuts
  • 1/2 cup raisins
  • 3 beaten eggs
  • Sauce:
  • 1 stick butter
  • 1 cup sugar
  • 1 tsp cinnamon
  • 1 tsp rum extract

Method

Break donuts into bite size pieces. Mix extracts and beaten eggs into milk. Mix in with donuts, coconut, nuts and raisins. Place donuts and mixture in a sprayed deep baking dish. Put dish in a 350 degree oven for 40-45 minutes. Then, melt butter and add sugar, cinnamon and extract. When serving hot bread pudding, place rum sauce on side.
