Persimmon Pudding


If you can your hands on some of this unique fruit known as persimmon, here's a wonderful pudding that has a rich sauce to pour over and enjoy.



Ingredients:

  • 1 cup sugar  
  • 1 cup flour  
  • 1 tsp soda  
  • 1 tsp cinnamon  
  • 1 tsp vanilla  
  • 1/4 tsp salt (if you use unsalted butter)  
  • 2 tbl butter (softened)  
  • 1 cup persimmon pulp (pureed)(2-3 fruits, must be really ripe)    
  • Grandma's sauce:    
  • 1 cup milk  
  • 1/2 cube butter  
  • 1 tbl cornstarch  
  • 1 cup sugar  
  • 1 tsp vanilla

Method

Mix all ingredients, 2-3 minutes until batter is smooth. Pour batter in greased 9 x 9 pan and bake in a water bath at 350 for 45 minutes or until toothpick comes out clean. For the steamed version; put rack in the bottom of a pot large enough to hold your steamer with the lid on. Place filled mold in center of pot and fill with boiling water to half way up the mold. Steam on low flame, 2-2 1/2 hours until skewer comes out clean, checking to be sure water level remains constant. Cool in pot until pudding pulls from sides. Grandma's Sauce: Whisk all ingredients in a sauce pan and cook on medium; heat until it starts to thicken. Approximately 10 minutes.

Notes: My easy way to puree persimmon is to cut in half and push though a strainer. Once you have pushed persimmon flat, scrape the rest of pulp free by rubbing the skin against the side of the strainer.
