This brown sugar candy is cooked in the microwave until it reaches a given temperature. Pecans are stirred in and the mixture is spooned out in patties.
Combine brown sugar, corn syrup and whipping cream in an 8-cup microwave-safe bowl. Microwave on high about 13 minutes. (Stop and check temperature with a candy thermometer--it should be between 234 and 240 degrees.)
Add butter and stir until well blended and mixture begins to cool and get creamy. Stir in nuts and quickly drop by tablespoonfuls onto waxed paper or buttered foil to cool.
OR pour into an 8x8x2" buttered pan, cool and cut into squares.
