Peppermint Fudge Pie

A no-bake pie with a chocolate cookie crust and marshmallow cream with peppermint candy pieces.
 

Ingredients

  • 24 cream filled chocolate cookies, finely crushed
  • 1/4 c. margarine, melted
  • 4 c. miniature marshmallows
  • 1/2 c. milk
  • 1 c. heavy cream, whipped
  • 1/2 c. crushed peppermint stick candy

Method

Combine cookie crumbs and melted margarine. Press into 9-inch pie plate; chill. In a double boiler, melt 3-cups marshmallows with milk; stir until smooth. Chill until slightly thickened; mix until well blended. Fold in whipped cream, remaining 1-cup marshmallows and crushed peppermint candy; pour into crust. Chill until firm.
