Pele's Passion Peanut Butter Fudge

This marshmallow cream fudge recipe combines the flavors of peanut butter and chipotle chili powder.
 

Ingredients

  • 2/3 cup evaporated milk (5 or 6 oz can)
  • 1 1/2 sticks of butter (3/4 cup)
  • 3 cups granulated sugar
  • 1 1/2 cup crunchy peanut butter
  • 1 tsp vanilla
  • 1 jar of marshmellow cream
  • 1 tsp ground chipotle powder (smoked chili powder, add more or less to taste)

Method

In a large heavy saucepan melt butter; stir in chipotle powder, milk and sugar. Bring to a boil and boil *stirring constantly* with a wire whisk for 6-10 minutes, until it reaches the soft ball stage. (Make sure you stir it constantly, or the sugar can burn, but don't overcook it or the butter will separate and it will not be as creamy.) Remove from heat and add peanut butter, vanilla and marshmallow cream; mix well. Pour mixture into a lightly buttered 9" square pan. Cool, then chill, but cut it before it's totally chilled.

 

Notes: This is gently spicy but not too much for the average person. The Chiplote reveals itself by swirling warmth over your tongue. It's devine and addictive!
