Pear and Amaretto Sauce

This recipe makes a large recipe, but if it is canned properly, the perfect topping too many different desserts will be on hand all of the time.
Ingredients
- 20 oz can pineapple, with syrup
- 20 pears, can be green
- 12 cups sugar
- 4 tbsp ground cinnamon
- 2 tbsp allspice
- 1 orange
- 1 tbsp orange zest
- 1/4 cup lemon juice
- 2 tsp sea salt
- 1/4 cup amaretto

Method
Place all of the ingredients in a large cooking pot. After the pears are tender, about 30 minutes, fill a blender half full with the mix. Put the blended mixture into a bowl and continue this process until all the mix is blended. Return the blended pears to the cooking pot and simmer for 30 to 45 minutes until mix thickens. Pour into sterilized jars and enjoy.

Number of Servings: yields 16 to 18 1/2 pints
