Peanut Butter No-Bake Bars


Peanuts and cereal are combined with a peanut butter mixture to make these no-bake treats.



Ingredients:

  • 4 Cups toasted oat cereal  
  • 2 Cups rice krispie cereal  
  • 2 Cups dry roasted peanuts      (salted or unsalted)  
  • 1 Cup light corn syrup  
  • 1 Cup sugar  
  • 1 1/2 Cups peanut butter (creamy or crunchy)  
  • 1 teaspoon vanilla extract

Method

Have ready a 15x10x1 bakng pan or something similar. In a large mixing bowl combine the first three ingredients. Mix them up well. Set aside. In a medium saucepan bring the corn syrup and sugar to a boil, stirring frequently. Remove from heat and stir in peanut butter and vanilla. Mix until thoroughly blended. Pour over cereal mixture and toss until thoroughly coated. Spread mixture in baking dish, press down, and cool in the fridge for about 45-60 minutes or until thoroughly cool. When cooled, cut into 2 inch bars or whatever size suits you.

Notes: I don't remember where I found this recipe but my family goes NUTS over these. My husband takes them to work and the guys at work want the recipe to take home to give to their wives. It's so easy and quick I know you'll love them too. TIP: I use a wide spatula to press the mixture into the dish before chilling. The bars cut better that way.
