These ice cream cookie sandwiches are made for kids of all ages and are easy for kids of all ages to make.
Preheat oven to 350 degrees. In a large bowl mix all of the cookie ingredients with an electric mixer, scraping down sides of bowl as needed. Shape dough into 3 inch balls and place on an ungreased baking sheet. Flatten with the bottom of a large drinking glass or mason jar. Bake for 15-17 minutes and remove to a rack to cool. Store in a covered container until ready to serve. To serve spread 1/2 cup ice cream on the bottom (baked side) of half cookies and cover with remaining cookies (baked side down on ice cream). Place chocolate chips in a medium bowl and roll edges of cookies in chips, pressing to adhere chips to ice cream. Serve immediately or put each finished cookie in a sandwich bag and freeze.
Notes:
These cookies can be made up to two weeks ahead and stored in a covered container or frozen for up to two months. Put them together at the last minute or assemble and freeze individual cookie sandwich bags. Kids (of all ages) love these treats, you can serve and eat them right out of their bag, this catches all the crumbs and escaping mini chips.
