Peanut Brittle


This candy recipe uses peanuts, but you can also use cashews.



Ingredients:

  • 3 cups granulated sugar
  • 1 1/2 cups water
  • 1 cup white corn syrup
  • 3 cups raw peanuts
  • 2 tbls. baking soda
  • 4 tbls. butter (do not use oleo)
  • 1 tsp. vanilla  

Method

Boil sugar, water, and corn syrup in a large saucepan until it spins threads (275 degrees). Add the peanuts and cook until the syrup is golden brown (295 degrees), stirring constantly. Remove from heat when your syrup is golden brown and add remaining ingredients and continue stirring until the butter melts. Quickly pour onto the buttered cookie sheets. Butter your hands and start pulling, going around all sides, until it is all thin. Wait until it is completely cool and break it into pieces and store in an airtight container.

Notes: Get the last 4 ingredients ready before you start, and wash your counters, dry them, butter your cookie sheets and the counters next to them. Do not try to cook this recipe in the microwave.
