Peanut Butter Balls

This mixture of crisp rice cereal, butter, peanut butter, powdered sugar and coconut is formed into balls and dipped in melted chocolate chips (with or without added wax), then cooled.
Ingredients
- 2 cups peanut butter (smooth)
- 1/2 cup melted butter
- 2 cups powdered sugar
- 2 cups coconut
- 4 cups Rice Krispies
- 12 oz. chocolate chips
- 1 inch piece edible food wax (optional)

Method
Mix peanut butter and butter together. Stir in sugar, then coconut and Rice Krispies. Chill at least 1 hour. Roll into balls. Melt wax, if using, in heavy saucepan over low heat; add chocolate chips. Stir chips over low heat until metlted. Dip balls into chocolate mixture (can dip fully or leave circle of ball showing on top, like a chestnut). Cool on wax paper.
Notes: Wax is not absolutely needed, but it keeps the chocolate from melting!
