Peaches and Cream Unpie


The bottom portion of this fruit dessert recipe is a rich mixture with sour cream, egg, sugar, almond extract and a little flour, poured into a rectangular baking dish. Sliced ripe peaches are arranged on top before baking this dessert.



Ingredients:

  • 1 1/2 cup sour cream  
  • 4 eggs  
  • 3/4 cup plus 2 tbsp. sugar  
  • 1/2 cup all-purpose flour  
  • 2 tsp. vanilla  
  • 1/8 to 1/4 tsp. almond extract  
  • Pinch of salt  
  • 5 ripe peaches, peeled, pitted and sliced

Method

Heat oven to 375 degrees. Butter a 2-quart shallow baking dish. Beat together sour cream and eggs on medium speed until smooth. On low speed, gradually beat in the 3/4 cup sugar, flour, vanilla, almond extract, and salt until well blended and smooth. Pour batter into baking dish. Top with peach slices, overlapping to cover the batter. Sprinkle top with remaining 2 tablespoons of sugar. Bake for 50 to 60 minutes or until set.
