Peach or Soft Fruit Cobbler

Fruit of your choice (such as peaches, blackberries or apricots) is placed on top of a cobbler batter and sprinkled lightly with sugar before baking. Serve warm or cooled, with or without ice cream- this is a great fruit dessert recipe.
Ingredients
- 1/2 cup butter (1 stick)
- 1 cup all-purpose flour
- 1 cup sugar
- 2 tsp. baking powder
- 1 cup milk
- 3 cups peaches, blackberries, or apricots (or other peeled and sliced seasonal fruit)
- 1/2 cup sugar for topping (decrease amount, if fruit is sweet)

Preheat oven to 350 degrees. Melt butter in 2-quart baking dish. Swirl to coat bottom & sides. Combine 1 cup sugar, flour & baking powder. Add milk & stir with fork until just blended--batter will be lumpy. Pour on top of butter but DO NOT STIR! Arrange fruit on top of batter. DO NOT STIR! Sprinkle 1/2 cup sugar over fruit. DO NOT STIR! Bake for 35 to 40 minutes or until top is golden. Serve warm or cooled.
Notes: This cobbler is terrific & EASY. It is also in no way damaged by the addition of vanilla ice cream at serving time! :-)
