Over the Top Chocolate Cake

A rich and creamy chocolate/Kahlua cake with a rich and creamy peanut butter frosting--your family will love this one.
 

Ingredients

  • 1 3/4 cup cake flour
  • 2 cup sugar
  • 3/4 cup good quality cocoa
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 3 tsp vanilla
  • 3/4 cup boiling water
  • 1/4 cup Kahlua
  • Frosting:
  • 1 cup sugar
  • 1/2 cup shortening
  • 2/3 cup Jiffy Creamy Peanut Butter
  • 1 cup milk
  • 4 Tbsp flour

To make the Cake: Sift flour, sugar, cocoa, baking soda, baking powder, and salt. Put these sifted ingredients into a bowl and mix on low until the dry ingredients are mixed together. Add 2 room temperature eggs, milk, vegtable oil, vanilla. Mix well and add boiling water and Kahlua. Pour the cake batter into 2 9-inch round cake pans and bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean. Let cake cool for about 10 minutes before removing from pan. Frosting: In a saucepan, mix the milk and flour together. Whisk together then put on a medium heat until very thick. When thickened, remove from heat, cover with plastic wrap and put in the fridge until very cold. In your mixing bowl add sugar, shortening and peanut butter; beat until smooth. When milk mixture in the fridge is completely cold, add to the shortening mixture and beat on high until light and fluffy. Frost cooled cake.

 

Notes: Make sure you spray your cake pans with Pam and use wax paper or parchment paper on bottom to keep the cake from sticking.
