This dessert is very creative and presents beautifully. Kids and adults alike will enjoy these treats.
Cut off the tops of the oranges and scoop out the pulp with a spoon, (use pulp for other use) reserve 4 tbsp of juice. Cut off a thin slice from the bottoms of the oranges so they stand right side up. Soften the ice cream in the refrigerator and stir in orange juice, mix well. Fill oranges with ice cream mixture and place in the freezer. Beat egg whites until they form soft peaks, add sugar and vanilla and continue beating until egg whites are stiff. Cover the filled oranges with the meringue, sealing well, and place on a baking sheet and bake at 475 degrees for 2 to 5 min. or until tops are lightly browned. Serve immediately.
