Light miniature yellow cakes topped with a powdered sugar glaze flavored with orange and lemon zest.
Preheat oven to 350 degrees.
Prepare four mini-muffin tins by spraying with nonstick cooking oil, such as Pam.
Combine cake mix, eggs, water and oil in a large mixing bowl.
Beat on medium speed with an electric mixer for two minutes.
Pour mixture into well greased mini-muffin tins and bake 15 minutes or until golden brown.
Meanwhile, whisk together all ingredients of glaze mixture in a medium sized bowl.
Remove muffins from tin before they have cooled completely and place on a large cookie sheet lined with foil. Drizzle with glaze mixture.
Let stand until cakes have absorbed glaze, approximately 10 minutes. Transfer to a cooling rack.
