Old Fashioned Sweet Potato Pie with Walnut Streusel

Mashed sweet potato combines with evaporated milk, eggs, sugar, spices & maple syrup in this pie filling, and is topped with a streusel mixture.
Ingredients
- 1 pie crust from a package of refrigerated pie crusts
- 2 eggs, beaten
- 1 (16-ounce) can sweet potatoes, drained & mashed (and sieved, if desired)
- 3/4 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves
- 2 Tablespoons maple syrup
- 1 (12-ounce) can evaporated milk
- Walnut Streusel:
- 1/4 cup packed brown sugar
- 3 Tablespoons butter, softened
- 1/2 cup all-purpose flour
- 1/2 cup chopped walnuts

Preheat the oven to 375 degrees. Roll out the pie crust to fit a 9-inch pie pan, trimming the edge to a 1-inch overhang. Tuck edges under and flute. In a large bowl beat the eggs until combined, then add the remaining ingredients in the order given. Pour filling into pie shell. Bake for 25 minutes. Meanwhile combine streusel ingredients and mix well. Remove pie from oven and sprinkle streusel evenly on top. Return pie to oven and bake 25 minutes more or until center is set.
Notes: I make 2 of these pies to serve at holiday time, and there are never any leftovers. I push the sweet potatoes through a potato ricer to make the filling extra-smooth.
