Old Fashioned Peanut Butter Fudge

This fudge recipe uses buttermilk and adds creamy peanut butter. There's also a mild chocolate-peanut butter variation.
 

Ingredients

  • 3 cups sugar
  • 1 tsp (unsalted) butter
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 tsp vanilla
  • 1/2 cup creamy peanut butter

Method

In a large saucepan combine and boil sugar, butter, salt, and buttermilk, stirring constantly, until soft ball stage. Remove from heat. Add peanut butter and vanilla and beat till well blended. Pour out into well greased metal or glass baking pan and let cool. When cool to the touch cut into desired size squares; allow to cool completely.

 

Notes: I pour the fudge into a metal cake pan. After it is cool and cut, I place the pan in the fridge for an hour or so. Then I turn it out onto waxed paper on the counter and the pieces pop out cleanly. When combining the sugar mixture you may also add 1 tablespoon baking cocoa for a little chocolate twist.
