OJ Glazed Oatmeal Apricot and Walnut Cookies

Update traditional oatmeal cookies with apricots, walnuts and an orange flavored glaze.
 

Ingredients

  • 1 cup softened butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cup unbleached all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 3 cups regular or 1 cup minute oats
  • 1 cup chopped walnuts or pecans
  • 1 cup chopped apricots
  • Glaze:
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla
  • 2-3 tbsp orange juice
  • 1 tbsp melted butter

Method

Cream together butter and sugars. Add eggs, one at a time, then vanilla, and mix until well blended. Sift together flour, salt and soda, and mix with wet ingredients. Stir in oats, nuts and apricots. Make tablespoon size balls and place on a baking stone or heavy cookie sheet. Bake at 350 degrees about 10 minutes. Mix glaze ingredients and pour onto still warm cookies. Sprinkle with fall colored sprinkles. For chocolate lovers, you can add 1/2 cup dark chocolate chips to dough too.

 

Notes: This recipe can be made with all organic ingredients to make it healthier. Keep cookies fresh and ready to eat by piling them neatly on a cake pedestal with a glass cover. The fall sprinkles add a festive flair, and two cookies tied into a clear treat bag with curly bows, makes a great treat for an office friend. Don't forget the chamomile tea bag, too.
