Oatmeal Bread Pudding


The comforting flavor of oatemal cookies, baked into an old fashioned bread pudding.



Ingredients:

  • 6 oatmeal cookies, crumbled
  • 8 slices day old wheat bread
  • 3 cups milk
  • 4 eggs
  • 1 cup sugar + 1/2 teaspoon
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla
  • 1/4 cup raisins  
  • 1/2 teaspoon butter

Method

Butter well a 2 1/2 qt casserole dish. In large bowl beat 3 eggs and 1 egg yolk slightly (save 1 egg white in small bowl). Add 1 cup sugar. Mix well, add vanilla, warm milk, bread, cookies and raisins. Let sit 10 minutes. Beat egg white until stiff, add 1/2 teaspoon sugar and fold into bread mixture. Pour into buttered casserole dish, and sprinkle with cinnamon. Bake in oven of 350 degrees F in a pan of water 1/2 way up side of casserole dish for 60 minutes or until knife comes out clean.
