These candies are made with mashed potatoes! The potatoes are combined with powdered sugar, butter & coconut, and dipped in chocolate and parafin.
 

Ingredients

  • 1 stick butter
  • 3/4 cup mashed potatoes
  • 1/2 lb coconut
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 2 lbs confection sugar
  • 12 oz chocolate bits
  • 4 squares unsweetened chocolate
  • 1/2 cake parafin

Method

Melt butter in double boiler. Add to mashed potatoes, coconut, salt and vanilla. Add powdered sugar and knead to mix well. Spread evenly in a buttered jelly roll pan or on baking sheet. Place in refrigerator and allow to harden. Cut into desired squares, 1 1/2" to 2". Chocolate Dip: Melt parafin in double boiler and add chocolates. Dip squares, allowing excess to drain off. Place on wax paper; store in refrigerator.
