Mom's Custard Pie

A creamy, nutmeg flavored custard filling in a crisp homemade pastry crust.
 

Ingredients

  • Crust:
  • 1 1/2 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 6 tablespoons ice water or enough to hold it together.
  • Filling:
  • 3 cups whole milk
  • 4 eggs
  • 1/2 cup sugar
  • 1 tsp nutmeg

Method

Crust: Stir together flour and salt using a pastry blender. Cut in shortening until pieces are pea size. Sprinkle ice water over flour mixture, handling as little as possible. Form into a ball, and using a lightly floured surface, flatten and roll dough from center to edges into a circle to fit a 9-10 inch pie pan. Filling: Scald milk in a 2 quart bowl. In another bowl, beat eggs with sugar. Slowly add scalded milk to eggs until mixed. Pour into unbaked pie crust and sprinkle with nutmeg. Bake at 375 degrees for 45 minutes or until a knife inserted in custard comes out clean.
