Mile-High Raspberry Pie

A whipped mixture of frozen raspberries, sugar, egg whites, lemon juice, vanilla, and whipped cream is piled into a baked pie shell and frozen. Because this pie contains uncooked egg whites, be sure to use safety precautions.
Ingredients
- 3/4 cup sugar
- 2 egg whites
- 2 cups frozen raspberries, thawed
- 1 tsp. vanilla
- 1 Tbsp. lemon juice
- Pinch salt
- 1 cup whipping cream, whipped
- 1 (9") baked pastry shell or crumb crust

Method
Combine sugar, egg whites, raspberries, vanilla, lemon juice and salt in large mixer bowl. Beat at high speed 15 minutes until thick and voluminous. Fold in whipped cream; pile mixture into baked pie shell. Freeze several hours. After pie is frozen, wrap in foil. To serve, remove from freezer and slice.
